SUSHI RECIPES

California sushi roll

With a nice presentation and the deliciousness in inside as well as simplicity is great for beginners who want to make sushi.

INGREDIENTS FOR THE PERFECTIONIST SUSHI RICE:

2 cups of Japanese Short rice or medium rice 

2 to 2 1/2 cups cold water 

4 Tbsp Rice vinegar

2 Tbsp sugar

2 tsp salt (suggested type: sea salt)

INGREDIENTS TO MAKE THE CUSTOM CALIFORNIA ROLL:

1/2 lb Imitation crab meat (p.s. the “log” shaped crab meat is the easiest to work with)
1 Avocado, ripe but still firm
1/2 medium cucumber, peeled and sliced into lenghty thin strips
Toasted Nori Seaweed
Toasted sesame seeds
A sushi rolling mat + Plastic wrap to cover the mat. If you don’t have a sushi mat, try using parchment paper instead.

Sauces and Dips!

Soy sauce (regular or low sodium)
Wasabi paste or wasabi powder
For spicy mayo: Mayonnaise (~1 Tbsp) and Sriracha hot chili sauce (~1 tsp)  or to taste

Instructions to make the sushi rice!

Step 1. First sushi vinegar needs to be made. By combing the vinegar, sugar, and salt then dissolving them together over low heat then letting the mixture cool.

Step 2. Wash the sushi rice with cold water until clean. Drain the rice. Using a rice maker , follow the rice makers instructions, and add the 2 cups of rice and 2 1/2 cups of water.(Salt is not needed)Cook on the white rice setting.( If you don’t have a rice cooker, any other method to cook the rice will do if it’s proven that it works)

Step 3. Use a LARGE bowl to hold the cooked rice ( One that is twice the size needed to hold the rice) and stir it , breaking it up to get rid of all the clumps. Let the rice cool down a bit. But not too much. It should still be warm. Little by little pour the sushi vinegar into the rice while you’re stirring and tossing it.( If the paddle becomes sticky with rice dip it in water shake it off and continue.)Use a rubber spatula, flat wooden paddle or spoon.

Now that you have the sushi rice you can make the California roll. However the sushi rice doesn’t just have to be used for the cali-roll. It can be used for other types of rolls and sushi bowls . ( We’ll have recipes for sushi bowls after the instructions to make the sushi rolls and an explanation of what they are in the intro at the top of the page!)

Making the California roll

Step 1. Put the plastic wrap over one side of your sushi rolling mat

Step 2. Fold the nori in half to split them only do this if it is too big

Step 3. Toast you’re sesame seeds over medium heat until golden brown.Chop veggies and the crab as well

Step 4. Put a handful of sushi rice make it generous on the sheet of nori use WET fingertips to spread the rice so your hands don’t get sticky. Spread the rice evenly .

Step 5. Flip the rice covered nori on the other side( Your rice will now be on the outside)

Step 6. Place your fillings(The veggies and crab) on one side of the nori. Don’t overfill or the roll won’t close.

Step7. Start rolling the sushi roll with the mat. Roll in tightly so it can be easier to cut. when the roll is complete sprinkle the toasted semeseeds on the roll while it’s on the mat so you can still turn it easily.

Step 8. Run a damp towel on your knife so the rice won’t stick to it. Cut the roll in half then line the half cut sushi rolls and slice into even 1-inch rolls.Slice quickly for an easier slice.
